For many Lake Biwa and fermented "funazushi” are inseparable entities, and Korian An has been preparing this dish using traditional and secret methods for more than 210 years and across six generations. Korian is the dining section of the long-standing funazushi maker "Uoji," and they offer a variety of delicious and different ways to sample this traditional dish that was the precursor to sushi.
